Peppermint Patties

Peppermint Patties
Ingredients:
3/4 cup sugar
1/2 teaspoon salt
1 and 1/2 teaspoon baking powder
2/3 cup shortening
1 egg
1 teaspoon vanilla
3 crushed candy canes
2 cups all purpose flour
*Optional* Bark melting chocolate 4 ounces
Directions:
Mix all ingredients in medium mixing bowl except the flour. After all other ingredients have been combined gradually add flour until dough forms. Form dough into log of desired cookie size (I us plastic wrap to help me roll my dough into a log) and then slice the log into healthy half inch rounds. Bake at 375 for 10 - 12 minutes or until cookies just start to brown. Once cookies have cooled you can melt your bark chocolate in the microwave and dip half of the cookie in the melted chocolate. I stuck them in the fridge to make sure they were set to go for the ride to mom's house yesterday afternoon. A big hit at Sunday dinner!
